RPM, the group behind RPM Italian and RPM Steak, will continue its popular Sommelier Experience at Chicago’s RPM Seafood. The intimate dining experiences in the restaurant’s newly renovated bar space started in spring 2021, a welcome change of pace after months of at-home meals and to-go beverage programs.
Starting at $225, guests can enjoy a set menu paired with bottlings sourced from RPM’s 1,200-selection wine list. There are two seatings each evening from Tuesday through Saturday for parties of two or four, while Friday and Saturday dinners include two extra courses for $285. The meals are served entirely by the sommelier team and chefs, who collaborate on the nightly-changing menus. Led by wine director Richard Hanauer, the experience is meant to expose diners to off-the-beaten path pours like mature rosés from producers like Clos Cibonne and R. López de Heredia, as well as prized first-growth Bordeaux and grand cru Burgundy.
Hanauer cited seeing guests’ enjoyment as highly rewarding, an experience that keeps the dinners moving forward. “Guests are really one-on-one with the sommeliers, who are very in tune with the guests’ emotions,” Hanauer told Wine Spectator. “Without question, the most rewarding part has been seeing how much guests enjoy this, the care that goes into the food and the care that goes into the personal menu.”
